MILK that is 2300 years past its sell-by date has confirmed that dairy farming took place in prehistoric Britain. Evidence of prehistoric dairy production has always been tenuous. But Richard Evershed of Bristol University and his colleagues suspected that if dairy products stuck to pottery that was then buried in soil, they would undergo chemical changes to produce fatty acids similar to those found in adipose tissue, where the body stores fat. They have shown that residues on Iron Age pottery from Northamptonshire were indeed milk-derived (Science, vol 282,
